Monday's Musings and Menus

This weekend was a good one. A lot was accomplished and it did not rain till last night. It was a bit colder than I would have liked, but we dressed accordingly and trudged forward. Today is a beauty with the sun shining 
brightly already. 



Last weeks menus HERE served me well. But I must confess I did switch out tuesday and thursday. It really is such a help having menus planned I hope I can keep up with this throughout the summer months.

So here are this weeks menus.

Sunday......oven fried flounder, fresh collard greens and roasted onion/yellow squash/cauliflower

Monday.......BBQ pork served on a toasted Joseph's bread with coleslaw

Tuesday......grilled chicken and a chopped salad

Wednesday.....turkey veggie burgers, parsnip fries and a low carb chocolate frosty.

Thursday......tomato basil soup and a chopped salad

Friday........flat bread pizza and chopped salad

Saturday.......turkey and roasted veggies

Well now that feels like a load off my mind. All I have to do is cook it now. It seems to me to take longer to decide what we are having than to actually fix it!

Tasty Tuesday

I will start out by saying I will not be sharing an exact recipe today.
But I will be sharing a product that I love and use quite a bit. As well as ideas of what to do with it. 

I have been tweaking my diet and way of eating for over a year now. I am seeing weight loss and better fitness as well as better numbers on all my bloodwork and all without taking any medication. So I wanted to share something that I had never used before but now I will not be without it. I mean it, I even take it with me on vacation

It is called Joseph's Lavash Bread. It is made with Flax, Oat Bran and Whole Wheat. And let me tell you it is yummy. One serving only has 7 carbs and 50 calories, with 5g of protein and 3g of fiber.






Now you can take it and use it like a tortilla and roll up with deli meats and cheese and loads of veggies and spicy mustard. 

Or for breakfast or lunch I like to lay one in the toaster oven and toast till lightly brown crispy. Quickly spread with a nut butter of my choice and some mashed berries. This is delicious!

Also for breakfast I will take the serving size and cut into smaller pieces toast as before, meanwhile smashing blueberries into a couple tablespoons of cream cheese or ricotta, sweeten with a touch of agave nectar and spread on the "crisps" while they are hot. This is a divine combo. Sweet, creamy, crunchy and nutty!

And for dinner I will take one and top with a slight bit of homemade pizza sauce, add finely chopped onions, peppers, red pepper flakes and turkey pepperoni. Then top with grated mozzarella. Makes the perfect dinner coupled with a chopped salad.

Monday and the Weekly Menus

Its Monday and there is a busy weekend behind me. But sunshine and hope before me. I figure I can take this week ahead and make it mine and that is what I intend to do, starting with our evening meals. 

Sunday.......we had chopped salad with ham.

Monday.......chopped salad and flatbread pizza

Tuesday......fresh roasted broccoli, cauliflower, yellow squash, onions and garlic sprinkled with shredded cheddar cheese

Wednesday......chicken broccoli stir fry

Thursday......chopped salad with tuna

Friday......taco boats served in romaine

Saturday........bacon cheeseburger salad

Planning my menus help save time and also makes me be prepared and not forget to lay something out. It allows me to use what I have in stock as well. We are trying to eat more whole foods and very little processed food.

Tasty Tuesday

Well I need to share a recipe today and since it is St. Patty's Day I picked a Hearty Corned Beef Salad. My oldest son used to love this salad. I hope you enjoy it as well.

Corned Beef Salad

7oz of macaroni (cooked and drained)

2 cups of canned corned beef

1 cup diced celery

1/4 cup diced onion

1/2 cup pickle relish

1/2 cup mayo

1tsp. prepared mustard

Mix all ingredients together, chill and enjoy!

Tips.......I used Miracle Whip and sweet relish. You make your own decision depending on what you like or have on hand.

We been having some real nice weather and I am so thankful for that. Today is not sunny but it is not raining either, so that is a good thing.

Girl Talk

Well its friday, the end of the week or the beginning of the weekend. Either way it is time for me to share some bits and pieces of my week and hopefully you will share as well.

I had a doctors appointment this week. It was my once a year checkup and as usual they did blood work. Well I had the blood drawn about a month ago so he would have the results and we could review them while I was there. He was very pleased with all my numbers. Several had changed since the last visit(2014) and without medication. So he said I must be doing something right! 

I did bring up the fact that one set of numbers that were not changing were those on the scales. As expected his response was, "well now when you get to be your age(55)". So I jumped on this one really quick, and let him know that I would not allow my age to be an excuse for the extra pounds or any aches and pains that I happen to experience. So he did a bit of the back stroke and we sat down to talk. We reviewed my eating habits and my exercise routines and also any outside physical activities that I partake of on a regular basis. In doing this he suggested a few things I might tweak to perhaps get things moving alone in the right direction. I will give some of them a try over time and will let you know of any positive or negative results.

As most of you know the weather last week was cold and wet and frozen solid for me. And then the thaw came and in 2 days it was all gone except for the mountains of ice where the plows had came through. Then the sun began to shine and we had several days in the 60's. But now it is gray and raining outside again. But that is NOT A PROBLEM! I believe those few days of sunshine and warm breezes was just a reminder of what was coming our way pretty soon. And perhaps the next time it comes it will be here to stay. Seven days from today and spring is here! YIPPY!

What about garden work? Yard Work? Seed planting? Are you guys doing any of the above? 

I garden in a very small condensed area but I get a lot of bang for my buck. I can a lot of veggies out of it. Here are some pics from past years. And  here  are some more.

I have planted a few varieties of tomatoes and have done some cleanup around the yard and garden area. But so far that is all for me.

How about you, what have you been doing to ready your lawn and garden for spring?

I do have some plans drawn up to work around the yard this spring. We will be putting in a new wall( very low) between the patio and the grass. We will be using those stackable landscape blocks. And it will only be 2 rows high. We had timbers there and they need replaced. 

We will be enlarging the hard surface around the firepit.

I will be making a new awning for my swing and husband is going to redo the wooden slats in the swing.

Also some of the fencing needs a bit more tension applied. So as you can see we will be very busy once the weather breaks.

Monday....white bean soup and corn bread

Tuesday.....BBQ ribs, chopped salad, roasted veggies

Wednesday.....Spaghetti and salad

Thursday.....homemade pizza, chopped salad

Friday....chopped salad and leftovers

Saturday.....oven fried flounder, chopped salad

So the weather is changing and I feel like eating lighter, how about you? Or am I the only one that does this?

I Am So Thankful


The week has been a slow one with lots of snow and frigid temps. But still there has been so many moments of thankfulness. I just wanted to give credit where it was due.

I am thankful for the snow for it will help to provide water for the summer gardens as well as streams and lakes.

I am thankful that our power was only off for about 12 hours, and that we were prepared to deal with it.

I am thankful for my husband who is a strong man in many ways and yet gentle to a fault.

I am thankful for our stores of food that allow us to cook without running to the store when a storm is coming. 

I am thankful for my crafting stuff that helps me to stay busy even when I am snowed in.

I am even thankful for getting a new sweeper, since my old one burned up.

I am also thankful for the beauty that the snow brings us, and the exercise!
