Kielbasa Stew for dinner

Today was a chilly damp day and I needed something for dinner to warm the insides as well as fuel the body. So we ended up with Kielbasa Stew.

First I placed a tablespoon of olive oil in a large pot, I then added a large chopped onion, medium chopped green pepper, 2 medium potatoes, 2 minced garlic cloves and 2 sliced hungarian wax peppers to the pot. I then sliced 3/4 a pound of turkey Kielbasa into coins and placed in the pot. This was followed by 2 cups of beef broth, a quart of canned tomatoes and a can of great northern beans. I seasoned this with 2 teaspoons of chili powder and coarse ground black pepper.

I baked cornbread and we had a delicious dinner. And my house smelled so good as well!!

This is one of those dinners that you can do your own thing. Like add something else or leave something out that someone in your family just won't touch! Make it like you want and call it your own creation!
