So Very Thankful

Well after the post I wrote the other day I feel like I need to just slow down and be thankful.
I am always thankful but I guess the other day I just needed to remind myself to stop and smell the roses. Or as the Lord would say, "Be still and know that I am God"

I am very thankful for my dad. He celebrated his 87th birthday this past friday and he still enjoys gardening so much.

I am thankful for the produce that his garden produces. Even though I pick most of it. 

I am thankful for just having time to spend with him.

I am thankful for the sunshine and the vitamin D we get from it.

And also the 3 days of rain we just had. Things are so green this morning.

I am thankful my hubs has a new "to us" riding lawn mower so he does not have to push in the high humidity.

I am even thankful to be able to wash clothes and hang them out today.

I am so thankful for the change in attitude toward food that my hubs has taken lately and I completely give the credit to the one above.

Things In My Head

There are at least a million things going through my head and I got to get some of them out of there! If for no other reason than to make room for some more......LOL! Have you ever felt that way or am I the only one?

We are leaving one month from today to go on vacation and I am so excited. I am already making lists and trying to get it together.

And of course I would love to lose a few more pounds before we go.

Whether we want to think about it or not, we are more than halfway through the year and those of us who create things to sell for the holidays had better be hot at as we are running out of time.

Weeds!! They are everywhere. In every bed and every garden I have. I go to bed and sleep at night, but not them, they grow all night long! And then they spend their days growing some more and laughing at me!

The hubs and I have been making some major changes in our lifestyle as far as how we think about food. We are trying to replace those comfort foods from days gone by with good for us foods that fuel our bodies. And it seems like some days all I have time for is thinking about what I am going to fix for the next meal. But I know in the long run this will pay off big time! So it excites me to move forward with this one.


I have a new granddaughter and it seems everywhere I turn is something else I want to make for her. As well as lots of things waiting in the wings to make for Christmas gifts. I really have to get started.

Well this could go on and on here but I believe I have cleaned out enough of my head to make room for some more ideas and items to remember. Shish! I really needed that!

Now I think I am going to go and sit down and give myself a pedicure. Relax and Breathe, I need to do more of this.

Tackle Father Time

Would anyone out there in blogland volunteer to find Father Time and tackle him for me. 
Just hold him down till I holler for you to let go!
I am so far behind and this just might give me a chance to catch up a bit. 

This week has been consumed with green beans. Lots and lots of green beans! I canned 42 quarts. And froze a few bags of them whole to put on the grill. And here is how I fixed them for dinner one evening. I am not much for recipes so I will just share what is in them and the technique for fixing and you can take it from there


I just strung, washed and dried the beans. I used an iron skillet with EVOO and added some garlic, added the beans and about a 1/4 cup of water and added a lid for a few minutes. Remove lid and cook out the water add some organic soy sauce and ENJOY! They were divine! We had them with grilled chicken breasts and pickled beets and a chopped salad. I just love summer time eating.

Blueberries

I have been spending my days preparing for winter and the days ahead. Putting food back for times ahead just seems like a good idea to me. So this week it has all been about blueberries. They get washed.




And then after letting them dry I put them on sheet pans and pop them in the freezer. Once frozen, they are sealed in approx. 2 cup packages with my food saver. This will allow us to use small amounts of the berries at a time and not run the chance of freezer burn from allowing air in like with a ziplock bag.



So that is what I have been creating!

Happy 4th Of July



I hope everyone who gathers with family and friends, to eat to much. Or perhaps to swim and enjoy each other company. And of coarse to watch things blow up at the end of the day. Be safe and enjoy your day!
